Dok Kae is an edible flower from the tropical tree Sesbania grandiflora, commonly used in Thai and Southeast Asian cuisine. The flowers are long, white, and soft, with a mild flavor that can be slightly bitter and astringent. They are often cooked rather than eaten raw and are commonly added to soups, sour curries, or served steamed with chili paste. In Thai cooking, Dok Kae is frequently used in dishes such as sour curry (gang som), where it absorbs the broth’s flavor while adding texture. Before cooking, the inner pistil is usually removed because it can be very bitter. Dok Kae is valued as both a vegetable and traditional ingredient.
