Manila tamarind is a tropical fruit that comes from the tree Pithecellobium dulce, which belongs to the legume family. The fruit grows in curved pods that turn pink or reddish when ripe and split open to reveal edible pulp surrounding shiny black seeds. The pulp is typically white or pink and has a sweet and slightly sour taste. Although it is called “tamarind,” it is not closely related to the common tamarind fruit. Manila tamarind is commonly eaten fresh as a snack and may also be used in drinks or desserts. The fruit is popular in many tropical regions, including the Philippines, where it is known locally as camachile.
